A while back, my SIL Becky had given me a bunch of her cookie recipes. I had yet to try any of them so I thought I'd give this one a go, mostly because it only required me to pick up one ingredient from the store...cake mix.
Look at that. THREE ingredients. Yes that's it! Since I had ventured into a couple batches of a more complicated cookie recipe last week, I thought I'd prop my feet up with this one. It even said mix by hand which means no dragging out the mixer or cleaning it after.
The funfetti made it especially colorful, but Becky said you can use any kind of cake mix. What a good idea! And guess what it tastes like?...cake!

Did you and your family like them?
You can also use canned pumpkin or applesauce as the moisture in the cookies. Or use dark chocolate cake mix and sub butter for the oil. They are SO easy!
